Lemon & Chia Seed Pancakes

Adding Chia seeds into these lemon pancakes will provide you with a ton of omega fatty acids for your day! Enjoy as breakfast or a little dessert! Let us get cooking!



Mix all dry ingredients in a bowl Mix all wet ingredients in a separate bowl, excluding lemon zest Slowly pour wet ingredients into the dry bowl while whisking. Whisk all ingredients until smooth, add in the zest of lemon. Heat a pan on medium with butter. Wait until the pan is hot. Ladle a large portion of the pancake mix into the pan. Cook for about 2 minutes, wait until the edges create small bubbles. Flip the pancake and cook on the other side for 2 minutes. Repeat until all batter is gone.

For the extra sweet topping, mix together 1/2 cup of confection sugar, about 1/2 cup of half and half, and some lemon zest to make a delicious lemon sugar topping.
