Summer salad with Figs, Blackberries and Bulgur



½ cup Green Hills Bulgur

3/4 cup water

1 cup fresh tomatoes diced

1/3 cup fresh basil

2 tbsp balsamic vinegar

1 tbsp balsamic glaze

1 tbsp Green Hills honey

Fresh ground black pepper

6 -8 California figs

1 Yellow bell pepper

1 cup Blackberries

2 cups fresh spinach

1/3 cup sliced almonds


In a small pot combine bulgur and water, bring to a boil then reduce to low heat and allow to simmer for approximately 10 minutes. When cooked transfer to a small bowl and allow to cool. Meanwhile, dice the tomatoes and place in a mixing bowl; add the freshly chopped basil, balsamic vinegar and ground black pepper and mix to combine. Now fold the bulgur into the mixture and transfer to a serving plate. Add the figs, yellow bell peppers, spinach and blackberries. Dress the salad with a drizzle of honey over the figs and the balsamic glaze over the other ingredients. Finish with the diced almonds to add that crunch.
