Tilapia & Alaskan Snow Crab Dinner
1 lbs. tilapia fillet
1 tbsp old bay seasoning
Fresh ground black pepper and salt to taste
½ lbs. of Alaskan Snow Crab (cooked)
1 cup Green Hills black rice
2 cups water
1 tsp salt
2 tbsp olive oil
2 cups kale
¼ cup water
2 tbsp apple cider vinegar
1 tbsp fresh dill
Pre-heat oven to 375 degrees F.
Evenly coat the tilapia fillets with the Old Bay seasoning, black pepper and salt. Grease the bottom of a baking pan with oil and arrange fillet approx. an inch apart in the pan. Place in oven and bake for 15 minutes.
Meanwhile, in a medium size pot add water, salt, 1 tbsp olive oil and black rice, bring to a boil then reduce heat to low and allow to simmer for about 35 minutes or until rice is tender.
Next sauté the kale in 1 tbsp of olive oil until the kale turns bright green, about 2 minutes. Then add the water, apple cider vinegar and salt n pepper to taste. Cover sauce pan with lid and allow to steam for 3 minutes.
Lay a bed of black rice and kale in a serving plate then place a fillet on top of the bed and finish with snow crab and dill. Drizzle with extra virgin olive oil and serve.
