Cinnamon a spice obtained from the inner bark of several tree species from the genus Cinnamomum. Cinnamon is used in both sweet and savory dishes. Ceylon Ground Cinnamon has a more subtle flavor than the more common Cassia variety, due to its lower volatile oil content. Ceylon also has a far lower content of coumarin, a compound with anti-coagulant properties that can be a health risk if consumed in large amounts.
