Xanthan gum is a largely indigestible polysaccharide that is produced by bacteria called Xanthomonas Campestris. The bacteria is place in a growth environment that contains sugars and other nutrients, and the resulting product of bacterial fermentation is purified, dried, powdered, and sold as xanthan gum. The powder is commonly used as a food thickening agent (in salad dressings, for example) and a stabilizer (in cosmetic products, for example, to prevent ingredients from separating).

Suggested Uses:

Use as a bulk-forming laxative to treat constipation.

Lowering blood sugar in people with diabetes.

Lowering cholesterol levels in people with diabetes.

Use as a saliva substitute for dry mouth.
